Have you ever been in a situation where the house could not cover your winnings? Say you have $50,000 in chips to cash out, but they only have $10,000 in cash. What would be the legal recourse for someone if that happens?

Nope, not been in a situation like this, but I'm also curious to know what would happen.
It would be a worry wouldn't it if you hit big at a casino and worried that they wouldn't cover your winnings.

If you were in a casino that couldn't cover your winnings, it would be a travesty. It makes one think that you should only gamble at places that you know for sure they keep a lot of money on hand for just such an event. I guess you should only gamble big at the big casinos.
