It's pretty normal for dealers to pay winnings in larger chip denominations, probably in the hope you'll just gamble them like you were the lower value chips.

Do you ask for change when this happens, or go along with gambling your winnings? I'm one of those awkward people who asks them to break the chips down. It takes longer but it helps me manage my bets.

At times I do and other times I just go with the dealer has given me. Typically, it makes sense to have the chips broken down because as you say, you are able to manage how you bet.

I'll break the chips down if I'm low on the lower denomination chips because I like to have a range of betting options immediately available. It also makes it easier to set aside winnings I don't want to gamble.
